This has become one of my favorite breakfast dishes to make for the family. It’s a hearty dish that warms the belly and the soul. It is very easy to make.
• Cast iron skillet
• Wooden spoon
• Grill/smoker or oven
• 4 cage free eggs
• 32 oz bag of frozen hash browns
• 1 tube of pork sausage (hot or mild depending on your preference)
• 1 red bell pepper
• 1 green bell pepper
• 1 large sweet onion
• Salt and pepper to taste
Preheat grill/smoker or oven to 400 degrees F. Next preheat your cast iron skillet. Once preheated add the pork sausage and cook thoroughly. Remove from skillet and put aside to rest. Leave grease from the pork sausage as a base. Next add the diced red and green bell peppers and sweet onion. Saute until the onions are translucent. Remove from skillet and set aside to rest. Next add the frozen hash browns and cook until golden brown and crispy. Add pork sausage, bell peppers and onions. Create four divots. Crack four eggs and add them to each divot. Evenly coat top with salt, pepper and Plowboys Yard Bird Rub.
Place in the grill/smoker or oven for 18 to 20 minutes. Remove and let rest for 1 to 2 minutes. Serve. This dish will make four equal servings.
